There are numerous hints throughout the movies which help to know the date of Luke’s birthday and his exact age at different periods of the story.
Star Wars Episode I – The Phantom Menace – Luke is not born yet.
Star Wars Episode II – Attack of the Clones – Luke is not born yet. His father and mother start romantic relations.
Star Wars: The Clone Wars – Luke is yet to be born.
Star Wars Episode III – Revenge of the Sith let us see Luke Skywalker being born (19 BBY) on an asteroid named Polis Massa, two days after the Empire was established.
Rogue One: A Star Wars Story – the movie takes place just before A New Hope, placing Luke at the age of 19. The flashback at the start of the film takes place approximately 6 years after Revenge of the Sith, making Luke 5 years old during the flashback.
Solo: A Star Wars Story – this spinoff movie takes place approximately 10 years after Revenge of the Sith making Luke 9 years old.
Star Wars Episode IV: it is 0 BBY, making Luke 19 during the events of the first Star Wars movie. He represents the hero archetype of “the young man, called to adventure”.
Star Wars Episode V – The Empire Strikes Back takes place 3 years after A New Hope (3 ABY). Luke is 22 years old. He learns that Darth Vader is his father.

Star Wars: Episode IX – The Rise of Skywalker takes place sometime after The Last Jedi, but Luke doesn’t age, as he died and become one with the Force.
